Barbecue Advice

Always clean the barbecue after use. Cleaning up old dirt can be difficult, and this makes sure that the barbecue is always ready for use. Clean the racks with a wire brush.

Brush the rack with oil before barbecuing to prevent the food from sticking to it.

Turn the barbecue to full heat before use, but only use medium heat when barbecuing. Otherwise it might catch fire.

Brush fish with oil or butter some time before barbecuing. Move the fish around a little in the beginning to prevent it from sticking to the rack. Only turn fish once on the rack to keep the pieces from crumbling.

Prick potatoes with a pin and put them on the lower rack to begin with, then move them to the upper rack when it’s time for other ingredients to be barbecued. Turn the potatoes quite often. I wrap them in aluminium foil when using a coal barbecue, and put the potatoes amidst the coals.

When using wooden pins it is advisable to let them soak in water for a couple of hours. This reduces the risk of the pins catching fire.

Remove as much of marinade or barbecue sauce as you can before barbecuing. Otherwise the sauce may leak into the grill and catch fire. Make sure that the grill is not too hot when cooking marinated food or food with barbecue sauce.
