Clam Chowder

(4-6 people)

40 g chopped onions
150 g tomato meat, cut into squares
1 kg clams
150 g potatoes, cut into squares
0.5 dl butter
½ tsp fresh thyme
0.5 l fish broth
5-6 rusks
4 tbsp chopped parsley
0.25 dl vermouth

Sweat the onions in the butter, add the potatoes, tomato meat, thyme and wine, and let simmer for a few minutes. Then add the fish broth and continue to simmer for 15 minutes. Finally add the clams and simmer for 5-10 minutes.
Add salt, pepper and parsley to taste and thicken the soup with finely ground rusks. Serve with whipped cream and fresh bread.
