Pan-Fried Entrcote of Veal with Red Onion Jam and Blue Cheese Sauce
(4-6 people)
800-1000 g veal
salt, pepper
Cut the veal into slices, 1.5-2 cm thick each. Fry them in the oil on a very hot pan for about 3 minutes each side. Leave the meat for a few minutes before serving.
Red Onion Jam
4 large red onions, chopped
100 g sugar
2 tbsp grenadine syrup
2 tbsp vinegar (4%)
2 tbsp water
Method:
Boil water, sugar, vinegar and syrup until well mixed. Then add the onions and let simmer for 7-9 minutes. Remove the pan from heat and leave to cool for an hour before re-heating the onions. Serve. The onions may also be served cold.
Blue Cheese Sauce
½ onion (chopped)
1 bay leaf
2 tbsp butter
0.5 l veal or beef broth
125 g blue cheese
1 tbsp honey
1 dl cream
Sweat the onion in the butter, then pour the broth over, add the bay leaf and allow to simmer (medium heat) for 10-15 minutes. Remove from heat and allow to cool for 10 minutes before sifting into another pan. Continue to boil. Grate the blue cheese and let simmer (low heat) for a few minutes before adding the cream. Simmer until ready. The sauce may be made thicker if necessary.
Serve with potatoes and boiled vegetables.
