Pan-Fried Salmon with Sesame Seeds, Tzatziki and Sweet-and-Sour Mushroom Sauce

(4-6 people)

4-6 steaks of salmon (180 g each), skinned and boned
1 egg white
salt, pepper
0.5 dl sesame seeds
2 tbsp sesame oil
oil for frying

Method:
Whip the whites lightly, roll the salmon steaks in them and sprinkle the sesame seeds over. Heat the pan well, pour in the sesame oil and the cooking oil, and fry the salmon at medium heat (skin-side facing upwards) until golden. Remove the fish from the pan and put into a 100°C oven for 10 minutes. It’s a good idea to make the sauce and the side dish before frying the salmon.

Sweet and Sour Mushroom Sauce
3 dl water (or fish broth)
1 dl white wine vinegar
1 dl sugar
1 tpsb tomato purée
½ lemon
1 onion
corn starch
100 g mushrooms
2 tbsp sesame oil
2 tbsp parsley

Method:
Boil water or broth along with vinegar, sugar, tomato purée, lemon and onion for 30-40 minutes. Sift and thicken with corn starch.
Slice the mushrooms and brown in the sesame oil. Add parsley and put into the sauce.

Tzatziki
1 English cucumber
1 small container yoghurt
2 chopped cloves of garlic
2 tbsp chopped fresh dill
2 black pepper corns
4 coriander seeds
salt

Method:
Cut the cucumber into 5mm thick slices, remove the core and salt lightly. Stir in the yoghurt, the garlic and the dill. Crush the seeds in a mortar and add to the yoghurt mix. Wash the salt off the cucumber and add as well.
Arrange the cucumber slices to that they form a tower and put them on a plate with the salmon and the sauce. Serve with fried vegetables.
