Pan-Fried Trout in Oatmeal with Green Sorrel Dressing
(4-6 people)
1 kg fillets of trout (skinned and boned)
2 eggs
4 dl oatmeal
salt, pepper
oil, butter
Method:
Cut the trout into 80-100 g steaks. Stir the eggs, roll the steaks in the eggs and then in the oatmeal. Fry in oil and butter on medium-heat frying pan. Do not overheat the pan (the butter might burn). Add salt and pepper when frying is done.
Green Sorrel Dressing
5 cups leaves of green sorrel (washed)
0.5 dl virgin olive oil
2 dl sour cream
salt
Crush the leaves in the oil in a mortar or a blender until even in texture. Then add the sour cream, and salt to taste.
Serve the trout with pan-fried cherry tomatoes and possibly lightly fried green sorrel leaves.
