Tomato and Sweet Pepper Soup
(4-6)
1 kg fresh tomatoes3-4 garlic cloves
500 g red peppers
1 tbsp tomato purée
1 dl parsley (chopped)
1 tbsp fresh thyme (chopped)
1 dl olive oil
0.5 l vegetable broth
60 g butter
1 dl sour cream
Soak the tomatoes and the peppers in oil and grill or barbecue until the tomatoes get dark in color. Then allow them to cool. Peel the peppers and remove the cores. Sweat the garlic in the oil, add tomatoes, peppers and purée and let simmer in the broth for 30 minutes. Then crush the soup and sift it. Add salt, pepper, thyme and butter to taste. Sprinkle with parsley and serve with bread bits, sour cream and fresh bread.
